1/4 cup olive oil
1 beef chuck or round roast, 4-5 lbs.
1 onion, sliced
1 carrot, peeled and sliced
1 celery stalk, sliced
1 bay leaf
3 whole cloves
3 fresh thyme springs
3 fresh parsley sprigs
2 T. balsamic vinegar
salt and pepper to taste

In a large pot over medium-high heat, warm olive oil. Add meat and brown for 8-10 minutes. Transfer to a plate. Reduce heat to medium and add vegetables. Saute, stirring 5-7 minutes. Add herbs and return meat to pot, sprinkle with vinegar and add 1 CUP WATER. Reduce heat to low, cover and simmer for 2 hours.
