5 lb. ground beef
5 heaping tsp. Tender Quick
3 tsp. garlic salt
4 1/2 tsp. coarse black pepper
4 1/2 tsp. mustard seed
2 tsp. liquid smoke

Directions:
Directions:
Mix. Divide into 3 parts. Place in double plastic bags and refrigerate for three days, kneading daily. Cook on a broiler pan on low heat (150) for about 4 hours.

The men in our family wouldn't think it was Christmas without a tray of this salami served with cheese and crackers.
