1 gal. whole milk (reserve 1 c.)
3 c. water
1/2 tsp. salt
1 1/2 c. rice (Carolina)
1 c. sugar (rice)
1 c. sugar (egg)
3 egg yolks (room temp)
1 whole egg
1 tsp. vanilla extract
1 tsp. orange extract (or lemon)
4 heaping tbsp. cornstarch

Boil water and salt. Add rice - boil - then simmer until water is absorbed (approximately 5 minutes). Add milk slowly, heat to boil stirring constantly. Simmer approximately one hour or until rice pops x and milk thickens. Ad 1 c. sugar and simmer for 3 minutes. Turn off. In separate bowl, beat eggs, sugar, vanilla, and orange extract. Dissolve cornstarch in reserved milk. Add to egg mixture slowly and stirring constantly. Slowly stir rice mixture into egg mixture until egg mixture is warm. Slowly add egg mixture to rice mixture. Simmer until it starts to bubble. Put in pan or bowls - top with cinnamon and/or walnuts.
Refrigerate once it has cooled.
