Dressing -
6 tbsp. Vegetable Oil or Canola Oil
3 tbsp. White Wine Vinegar
1 ½ tsp. Lemon Juice
1 ½ tsp. Dijon-style Mustard
Salt and Pepper to taste

Salad -
3 c. diced cooked Chicken
½ c. Orzo Pasta cooked according to the package directions
1 c. Cherry Tomatoes, halved
4 Green Onions, thinly sliced
1 Jar (6-oz) marinated Artichoke Hearts, core removed, sliced into thick slices

In a small bowl whisk together all dressing ingredients.In a large bowl combine the chicken, cooked orzo, tomatoes, green onions and artichoke hearts: toss with dressing to combine. Season with salt and pepper to taste.
