2 c. Buttermilk
2 c. Flour
2 tsp. Baking Powder
2 Eggs
½ tsp. Salt
½ tsp. Baking Soda
2 tbsp. Sugar
4 tbsp. Melted Butter

Directions:
Directions:
Separate the eggs and beat the whites stiff. Mix all the other ingredients together at one time and beat until smooth. Allow batter to set for 30 minutes to let baking powder work. Fold in the egg whites last. Put about a tablespoon of vegetable oil or shortening in the bottom of each Aebleskiver cup heat on stove over medium heat. Pour in about 2 tbsp. of the batter into each cup and soon as they get bubbly around the edges, turn quickly - Danish cooks like to use a long knitting needle for this but a fork would work very well. Continue cooking, turning the ball to keep it from burning, until a straw or the knitting needle comes out clean when stuck in the center. Serve hot with syrup, jam or powdered sugar.

These are delicious for breakfast, luncheon or Sunday night supper. A special pan, called an Aebleskiver Pan, Monk's Pan or Danish Cake Pan is needed for frying them. They are a staple at Connie's house on Christmas morning.
