Ingredients: 3-4 dozen Large Blue Crabs Generous sprinkles Black Pepper, Coarse Kosher Salt, Dry Mustard, Old Bay Seasoning, Dry Minced Garlic, Garlic Powder Cayenne Pepper (optional in a modest amount) 2 Bay Leafs Oregano Basil (dried or fresh cut) 1 12 oz Beer or Apple Cider Vinegar 1 equal amount of water

Directions:Setup: One large seafood steamer (w lid) and one set of long-handle tongs. Dump live crabs into a deeps sink with running cold water for a quick bath.
Preparing the Pan: Using long-handle tongs, carefully grab each crab and place into steamer until half full. Begin the first phase of seasoning by generously sprinkling those spices listed above. Add a Bay Leaf, a couple of shakes of Oregano, Basil, Cayenne Pepper (opt). Resume filling the steamer with remaining crabs and follow the same process for spicing.
Splash beer/vinegar over the crabs, trying not to wash off seasoning. Be careful that this splash may upset crabs, so have the lid handy to be sure they don't crawl out of the pan!
Remaining liquids (water) should be poured down the side or in the base of the pan. It's important to have enough liquid in the base of the steamer in the event of evaporation during steaming.
Cooking: Place pan on stove and heat on high until steam is created. Then turn to medium and steam for 30 minutes. Turn off heat and let set for a few minutes. You may prefer to sprinkle the top surface of the crabs with additional Salt and Old Bay.
