Crumble
1 cup flour
1/3 cup oats
3/4 cup sugar
Pinch of salt
6 Tbl melted butter
1/2 cup chopped walnuts or hazelnuts

Rhubarb
4 cups chopped rhubarb
1/3 cup sugar
1/4 cup flour
1/2 tsp vanilla extract
1/2 tsp orange zest
Couple squeezes fresh orange juice
1/4 tsp salt

Directions:
Directions:
Preheat oven to 375º
Combine crumble dry ingredients in a bowl, stir in 6 Tablespoons melted butter, and chopped nuts. Squeeze and stir mixture into large crumbles and place mixture in the freezer. Toss the chopped rhubarb, sugar, flour, vanilla extract, orange zest, juice and salt in an 8 x 8 inch glass baking dish. Scatter the cold crumble on top and bake in a preheated oven until golden and bubbly, 45-50 minutes. Let cool for 15 minutes, serve with vanilla ice cream!

Get local fresh rhubarb if at all possible, it will work with frozen if you can't find the fresh and you need a rhubarb fix!
