1 large octopus
1 medium onion chopped in quarters
1 c. olive oil
1 tbsp. pimenton dulce
1 tsp. pimenton picante
coarse salt

Directions:
Directions:
Fill a large pot with water, add the onion and bring to a boil.

Once at a boil, carefully dip the octopus in 3 times before dropping completely into the water. Boil for approximately 45 minutes or until tender.

Meanwhile, make the sauce by adding the olive oil, pimenton dulce and pimenton picante and let meld together.

Once the octopus is done and cut up in "tacos" gently drizzle with the oil and sprinkle with the coarse salt and enjoy.
