1 pound fresh spinach
1/4 pound fresh mushrooms
1 small red onion
8 slices bacon, cooked and crumbled
3 hard boiled eggs, sliced
Dressing:
1/2 cup vegetable oil
1/3 cup vinegar
1/3 cup sugar
1/4 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. pepper

Directions:
Directions:
Wash spinach and tear into bite sized pieces.
Combine spinach, mushrooms, eggs, and onion is salad bowl.
For dressing, combine oil, vinegar, sugar, and seasonings in jar. Cover and shake well.
Top spinach salad with dressing just before serving.
Sprinkle with bacon.

If time is a factor, a great dressing is a jar of Paul Newman's Italian Dressing with added, crushed garlic. I mince 2-3 garlic cloves and add to the dressing....tastes like homemade!
