4 cups cooked chicken, cubed
12 small, boiling onions
3/4 cup cooked peas
3/4 cup cooked carrots, sliced
3/4 cup cooked celery, sliced
6 tbsp. butter
6 tbsp. flour
2 cups chicken broth
1 cup heavy cream
Salt and pepper to taste
1 pie crust

Directions:

Preheat oven to 425º.
Melt butter, stir in flour and cook 2 minutes. Slowly add broth, cream, salt and pepper. Cook 5 minutes until thickened and smooth.
Add chicken, onions, peas, celery, and carrots.
Pour into a deep dish pie plate.
Top with pie crust, crimp edges. Cut vent in top of pie dough to allow steam to escape.
Bake 25-30 minutes until crust is browned.

Instead of piecrust, you can place biscuits on top with edges touching pie plate. Bake at 450 degrees 15-20 minutes.
