1 - 20 ounce can pineapple chunks, drained (reserve juice)
1/2 cup sugar
3 tbsp. flour
1 cup grated cheddar cheese (4 oz.)
1/4 cup butter
1/2 cup Townhouse crackers, crumbled

Directions:
Directions:
Drain pineapple (reserve 3 tbsp. pineapple juice).
Combine sugar, juice, and flour. Add pineapple chunks and cheese. Mix well.
Spoon into a 1 quart, greased casserole dish.
Combine crushed Townhouse crackers and softened butter. Mix well. Sprinkle over pineapple mixture
Bake at 350 degrees for 30 minutes.

I got this recipe while visiting Mema in Jacksonville, Fla. It has become the #1 family favorite! We serve it at Christmas, Thanksgiving, Easter, etc.
