1 1/2 pounds ground beef (80/20)
1/2 cup rice (boil 10 minutes and strain)
1 large egg, beaten
1 onion, chopped fine and sauted in 2 tbsp. butter or oil
Salt and pepper to taste
2 cans tomato soup
1 large head of cabbage

Remove thick, lower core from the cabbage.
Boil cabbage, removing cabbage leaves, one at a time, as they fall free from the core.
Cool.
Trim hard vein from cabbage leaves.
Saute onion until transparent.
Combine with meat, egg, rice, seasonings, and mix well.
Place 1/2 cup of meat mix onto the cabbage leaf and roll up, envelope style.
Mix tomato soup 3:1 with water. Place a small amount on bottom of dutch oven or large casserole dish. Line bottom with left over cabbage leaves.
Place stuffed cabbage, fold side down, and cover rolls with diluted tomato soup to barely cover. Place any leftover cabbage leaves on top.
Bake at 325 for 2 hours, basting from time to time.

You can place meat mixture into green, orange, or red peppers for a simple dinner with guests. Remember to baste the peppers while cooking.
