2 lbs. skinless bone-in chicken thighs
1/4 tsp. salt and a pinch of pepper
1 tbsp. olive oil
4 slices chopped bacon
4 cloves garlic, sliced
1 sprig fresh rosemary
1 cup reduced-sodium chicken broth
2 cans cannelli beans, drained
2 tbsp. chopped parsley
2 bunches fresh spinach

Preheat oven to 375º.
Season chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken; cook 4 minutes per side. Place on a baking sheet and bake for 20 minutes.
In the meantime, add bacon to skillet; cook five minutes until crisp. Stir in garlic and rosemary; cook 1 minute.
Pour in chicken broth, cannelli beans, and parsley.
Return chicken to skillet and simmer 5 minutes.
Served with sautéed spinach.
