4 boneless top loin pork chops, 1 inch thick
2 tbsp. olive oil
2 large eggs
salt and pepper for seasoning
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. Adobo
1 tbsp. fresh parsley, chopped
1 cup Italian style bread crumbs
1 cup Parmesan cheese, grated

Directions:

Preheat oven to 400º. Brush the chops with one tablespoon of olive oil and season generously with salt and pepper on both sides.
In s small bowl, beat together both eggs; add garlic powder, onion powder, Adobo and parsley, whisk well until combined and set aside.
In a shallow bowl, add the Parmesan cheese and set aside.
In another shallow bowl, add the Italian bread crumbs and set aside as well.
Coat the chops completely with the Parmesan cheese, patting to adhere to both sides. Dip into the egg-seasoning mixture, then coat completely with the bread crumbs. Make sure that both sides are completely covered.
In a greased baking dish, add the remaining tablespoon of olive oil and coat the bottom of the dish. Place the chops in the dish and bake for 15 minutes; flip each over and place back into the oven for an additional 15 - 30 minutes until they are golden brown and the center reaches 150 degrees.
