2 pounds lean ground beef
3 tablespoons olive oil
2 large onions chopped
3 garlic cloves minced
5 tablespoons chili powder
1 1/2 tablespoons ground cumin
2 teaspoons dried oregano crushed
1 teaspoon fresh ground pepper
1/2 teaspoon ground red pepper
3 cups hot water
6 oz can of tomato paste

1. Set a large heavy pot over medium heat Add the beef and cook breaking it up with a spoon until brown. Transfer beef to a bowl and set aside.

2. Heat the oil in the same pot over medium high heat. Add the onions and garlic: cook until softened, about five minutes. Add the chili powder, cumin, oregano, black and red pepper and cook, stirring constantly, just until fragrant. Stir in the reserved beef, hot water, and tomato paste, and bring to a boil. Reduce the heat and simmer until the mixture is thick and the flavors are blended at least 30 minutes longer.

I personally like to have beans and bell peppers with chili, as does every other member of the family. Dad won't eat them so this is a bare bones texas chili-con carne. If you can convince him adding three bell peppers sliced a 28 oz can diced tomatoes and 1 pound of dried rinsed pinto beans good for for. If not your just eating the meat soup.
