1/3 cup lo fat cottage cheese
2/3 cup oatmeal
1/4 cup skim milk
1/2 tsp vanilla
1/2 tsp cinnamon
6 TB egg white
1/2 ripe banana

Directions:
Directions:
Combine all ingredients in a blender and blend until smooth like batter. Heat a nonstick skillet over m/h heat and spray with cooking oil or lightly coat with canola oil. Pour out batter into pancake size medallions and cook until visible side shows some bubbles (as you would with regular batter) Flip and cook until other size is golden brown or even a bit darker brown. Serve immediately with butter/syrup, or an of your other favorite toppings. These are also great with peanut butter, strawberries, or any other kind of fruit.
