1 1/2 # of baking potatoes
1 c instant potato flakes
1/4 # butter
3/4 t dried basil flakes
2 c diced yellow onion
1/2 t hot sauce
1/3 c flour
1 c heavy cream
*5 c water
1 c milk
*1/4c low salt chicken broth (* I use about 5 cups chicken broth instead of the water and broth)

Directions:
Directions:
Have the potatoes, baked skinned and cut into small cubes and set aside ( I bake them the night before)
Melt butter in a large sauce pan, add onions and saute over low heat for about 10 minutes until they are translucent
Add flour to onions & butter and cook 4-5 minutes stirring until the flour is absorbed
In a separate container combine water, chicken broth, potato flakes and seasonings. Stir or whisk to remove all lumps. It will thicken. Add slowly to the onion mixture stirirng constantly. Increase to medium heat and continue cooking until it simmers
Add milk & cream stirring until smooth and lightly thickened. Simmer for 15 minutes, don't let it boil.
Add cubed baked potatoes and stir to combine.
Remove from heat and serve with shredded cheese, bacon, cubed ham, scallions or whatever else you come up with !
