4 or 5 large russet potatoes
1 cup mayonnaise
2-3 Tbsp white vinegar
1 small onion
1 tsps white sugar
1 Tbsp mustard
2 hardboiled eggs
1 Tbsp salt
1 tsp pepper

Scrub potatoes and boil till soft (I use a cake tester and if it pierces easily and not hard, they are ready

Hard boil 2 eggs or 4 if you want to add sliced egg on top for decoration

In a food processor, puree onion and add all remaining ingredients till smooth

Peel potatoes and cut in half lengthwise then slice each half in coins about 1/8 inch thick

Taste sauce, you may have to add more vinegar.

Mix in large bowl until well blended and refrigerate

I always liked to make the potato salad a day or two ahead, so all the flavors marry.
