1-1/3 cups mayonnaise (I use light mayo and non-fat greek yogurt combined)
1-1/2 tablespoons chives, chopped
2 tablespoons fresh lemon juice
1/2 teaspoon coriander
1/2 teaspoon nutmeg
1/4 teaspoon cayenne pepper

5 cups chopped, cooked chicken (I use rotisserie chicken)
1-1/2 cups chopped celery
1 cup halved red grapes
1/4 cup minced red onion
1/2 cup slivered almonds (I have used pecan halves)
salt and pepper to taste

Directions:

Combine first six ingredients, then mix with remaining ingredients except nuts. Refrigerate one hour or two to allow flavors to blend. Stir in nuts at the very end so they stay crunchy.

This is a modified version of the chicken salad they used to serve at Ovens of Brittany in Madison. Serve on soft rolls, croissants or lettuce.
