1 Unbaked Pie Crust
1 Cup Light Brown Sugar, Packed
1/2 tsp. Cinnamon
3/4 tsp. Pumpkin Pie Spice
2 Eggs
1 14.5 oz. Can Libby's Pumpkin
1 12 oz. Can Carnation- Evaporated Milk

Directions:

Combine sugar, salt and spices. Beat eggs with wire whisk. (important- Don't use an electric mixer.)
Stir in sugar mixture, can of pumpkin and gradually stir in carnation milk. Pour in unbaked pie crust. bake in a preheated 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and bake 40-50 minutes until knife inserted near center comes out clean.

Taste to see if spices are right. IF not enough add a little more cinnamon- not pumpkin spice. If you have a measuring cup or bowl with a pouring spout, put the pumpkin mixture in it. Put empty pie crust in oven then pour in pumpkin mixture to prevent spills and carrying full pie crust to oven. Always use light brown sugar, Libby's brand pumpkin and Carnation evaporated milk.
