3-4 lbs. potatoes, peeled and boiled
6 eggs, hard boiled & peeled
small onion, chopped
1 C. mayo
1 med. jar olives with pimentos
2-3 T. yellow mustard
1 T. celery seed
1 T. salt
1 tsp. pepper

Directions:
Directions:
Dice potatoes in large bowl. Separate yolks from whites and place yolks in small bowl for dressing. Chop whites and add to potatoes along with onion. Add about half of the olives, chopped. Add celery seed and pepper.

Mash yolks adding mayo, mustard, and juice from olives. Blend until smooth. Adjust to taste by adding more mustard or olive juice.

Pour dressing over potatoes and mix well. Initially the salad will be wet as potatoes will soak up the dressing. Salt as needed. Add more olives or celery seed as needed for taste.

Best if made a day ahead so flavors will blend.
