1 large eggplant
1 cup chopped onion
1 cup chopped mushrooms
1 tsp. oregano or basil
1 tsp. salt
1/4 tsp. black pepper
2 tbsp. butter
1 cup cooked ground beef
1/2 cup dry bread crumbs or cracker crumbs

Directions:
Directions:
Preheat oven to 350º F.
Peel eggplant and cut into chunks. Boil in salted water until fork tender. Drain. Saute' onions, mushrooms and seasoning in butter and add to eggplant, add meat and crumbs. Mix well.
Spoon mixture into casserole and top with parsley. Bake until bubbly.
