Mix: 1 C. sugar
3 T. cornstarch

Mix and add to sugar mixture:
1 T. grated lemon rind
3 egg yolks (Save egg whites to make meatloaf.)
¼ C. melted butter
¼ C. fresh lemon juice
Whisk in:
1 C. milk

Directions:
Directions:
Cook (while whisking constantly to prevent sticking to the bottom of the pan) over medium-high heat to make a thick pudding.

Cool with plastic wrap over the pudding to prevent crust formation on the pudding.

Fold in: 1 C. sour cream

Pour into baked 9-inch pie shell.

Top with: Whipped cream (1 pint whipped-spread over whole pie.)
