6 large sweet potatoes
¼ pound butter, softened
½ cup light cream (half and half is OK)
½ cup Madeira wine
½ teaspoon cinnamon
½ teaspoon salt
½ teaspoon nutmeg
1 tablespoon freshly grated orange rind
Butter as needed on top
Chopped pecans (optional)

Directions:

Bake sweet potatoes 1 hour @ 375 degrees or until tender. Cool and remove skins, mash with butter, cream, and Madeira. Add remaining ingredients and place in buttered baking dish. Dot with butter, sprinkle with optional pecans and bake 25 minutes @ 350.

I use a Cuisinart food processor and processed a little cooled potato, butter, cream and wine at a time. Made a day in advance, and since the casserole came right from refrigerator adjusted the baking time longer.
