2 tsp. dried thyme
¼ tsp. ground cloves or allspice
2 tsp. salt
1 tsp. pepper
1 tsp. cinnamon
2 tsp. dry minced garlic

Directions:
Directions:
Rub on roast and set overnight in refrigerator. Preheat oven to 475 degrees.
Roast in oven for 30 min. Remove from oven for 30 min. Back into 325 degree oven for about 15-30 min. or until internal meat temp reads 145 degrees. (I recommend a digital meat thermometer that stays in the meat while it’s cooking.) Remove from oven (temp will rise to 150+).
