4 lbs potatoes (12 medium)

Add:
1 8 oz. pkg. cream cheese, softened
4+ oz. of sour cream (you can hardly add too much cream cheese or sour cream;
I just keep adding one more spoon, one more chunk. You will figure out what tastes/looks right)
2 tsp salt
1/8 tsp pepper
1 clove garlic, crushed

Boil and mash potatoes. I use my mom’s old potato masher first, then I add some of the hot potato water and a little butter, then beat with a hand mixer. Add the water a little at a time until the potatoes are the consistency you like- it’s easy to add too much. I don’t use milk.
Beat at high speed until smooth and light. (My friend adds ¼ C. chopped chives, but I don’t like them). Spoon into a lightly greased (or buttered) baking dish. I use a large Pyrex bowl. Sprinkle with Parmesan cheese (I use quite a bit to cover the whole surface) and paprika. Dot with butter. Bake in moderate oven (350 deg.) or until lightly golden and heated through.
I prepare ahead of time and refrigerate. I usually start heating the potatoes in the microwave since it takes so long in the oven. You can stick them in the oven at the end. The oven makes the cheese/paprika/butter top a dark golden-red color.
