2 c. sugar 2 tsp. cinnamon
½ c. veg. oil 1 tsp. nutmeg
2 eggs 4 c. diced apples
2 c. flour 1 c. chopped walnuts
2 tsp. baking soda ½ c. raisins (optional)
1 tsp. salt

Directions:
Directions:
In large bowl, combine sugar, oil and eggs. In separate bowl, sift together flour, soda, salt, cinnamon, and nutmeg. Add to sugar mixture, mixing well. Stir in apples and walnuts and/or raisins, if using them. Pour into greased 13x9 inch pan. Bake in 350 degree oven for one hour or until center of cake springs back when touched lightly.

The cake can be served plain or frosted. Whipped cream or ice cream are also good.
