1 pkg. yeast
½ c. milk
½ c. butter
1/3 c. sugar
½ tsp. salt
3¼ c. flour
3 beaten eggs and 1 beaten yolk.
1 T. sugar

Directions:
Directions:
Soften yeast in ¼ c. warm water
Scald milk, cool
Cream the butter
Add milk
Sift flour
Add 1 c. of flour to creamed mixture.
Add yeast, 3 beaten eggs and 1 beaten yolk. Beat well.
Add remaining flour and beat 5-8 min. longer
Cover, let rise until doubled (2 hours)
Stir down, beat well
Cover w/ foil, refrigerate over night
Stir down, divide dough in fourths, shape, and put into muffin cups to make 24 brioches

Cover, rise (1 hour-ish)
Combine 1 slightly beaten egg white with 1 Tb. sugar, brush tops
Bake at 375 degrees for 15 minutes

“These rolls of Aunt Mickey’s are so soft and lovely and buttery. When you form the brioches, you put a larger ball in the muffin cup and squash it down a little with your thumb. A second little round ball goes on top. (Think birds nest). Push down just a little or it will pop right off when the dough rises (I speak from experience). Company and family will love these rolls and think you are a very talented baker!” Barbara
