1 c. sifted flour
¼ c. sugar
1 tsp. grated lemon peel
½ tsp. vanilla
1 egg yolk
¼ c. soft butter

Filling:
5 pkg. softened cream cheese
1 ¾ c. sugar
3 Tb. flour
2 tsp. grated lemon peel
1 ½ tsp. grated orange peel
¼ tsp. vanilla
5 eggs and 2 egg yolks
¼ c. heavy cream

Crust:
Mix all the dries, then add the last 4 ingredients. Press with fingers into bottom and partly up sides of a large spring form cheesecake pan.

Filling:
Bake 10 minutes at 450 degrees. Turn heat down and bake 1 hour more at 250 degrees. Cool 20 minutes and spread sour cream mixture gently to top. Bake 5 minutes more.

Sour cream topping: Blend 1 pint sour cream, 1 tsp. vanilla, 4 Tb. sugar.

“There is no better NY deli type cheesecake recipe. The crust is terrific. Mom found this recipe somewhere and initiated putting the sour cream topping on it. We made it all the time at Greenville Arms and always took it to Thanksgiving at Christman’s in Windham.”
