2 eggs, beaten
1/4 tsp salt
1/4 tsp pepper
3/4 c. unseasoned dry breadcrumbs
3/4 c. ground pecans
2 1/4 lbs walleye or any freshwater fish
vegetable oil
1/3 c. butter
1 Tbsp fresh lemon juice
1/8 to 1/4 tsp cayenne

In medium mixing bowl, combine eggs, salt, and pepper. In shallow dish, combine bread crumbs and pecans. Dip fillets first in egg mixture then dredge in bread crumb mixture to coat.
In 12 " skillet, heat 1/8" oil over medium heat. Add fillets. Fry for 5-8 minutes or until golden brown, turning once. Wipe out pan with paper towels. In same skillet, melt butter over medium heat. Stir in juice and cayenne. Spoon over fish.
