2 2/3 c. flour
1 1/3 c. sugar
4 tsp. baking powder
1 1/3 c. milk
1/2 c. margarine, softened
2 eggs
2 tsp. vanilla

Pineapple Topping:

1/2 c. margarine
1 1/3 c. brown sugar
1/4 c. water
1 can pineapple slices, drained and halved
Maraschino cherries, halved

Directions:
Directions:
In a bowl, combine flour, sugar and baking powder. Add milk, margarine, egg and vanilla. Beat with an electric mixer on low speed till combined. Beat on medium speed for 1 minute.
Next, prepare pineapple topping mixture: Melt margarine in a 9 x 13 baking pan. Stir in brown sugar and 1/4 cup water. Arrange pineapple halves and cherries in the baking pan. Spoon cake batter into the pan, on top of the pineapple halves. Bake in a 350º oven for 30 - 35 minutes, or till a toothpick inserted near the center comes out clean. Cool on a wire rack for 5 minutes. Loosen sides, then invert cake onto a plate. Serve warm.
