1 package - (normally around 2#) of shredded potatoes (fresh or thaw if frozen)
2 1/2 cups - shredded cheese (I use sharp cheddar for more flavor)
2 cans - cream of chicken soup
16 oz - sour cream

1 stick of melted butter, if desired (the original recipe called for this, but I don't use it anymore and can't taste the difference)

Bag of plain Lay's potato chips (you will need around 8 oz of chips), crushed

Preheat oven to 350º

Sprinkle potatoes and cheese (and melted butter if using) in 13x9 baking dish.

Mix in soup and sour cream, then layer crushed chips across the top.

Bake for 1 1/2 hours, or until mixture is bubbly and chips are browned.

If chips brown too quickly, cover in foil so the rest has time to bake.

A friend made this for me in 1992 and I instantly fell in love! It has been a go-to potluck dish to take to the office and family gatherings for more than twenty years. It's a great "neutral" dish that most everyone loves and asks for again and again!
