2 cups sifted cake flour (reduce by 2 Tbsp. if using all-purpose flour)
1 1/3 c. sugar
2 1/2 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1 c. less 2 Tbsp. milk
1 1/2 tsp. vanilla
2 eggs, unbeaten

Sift the flour, sugar, baking powder, and salt into a mixing bowl. Drop in the shortening, add 2/3 of the milk, and vanilla. Beats for 2 minutes by the clock (approximately 150 strokes per minute). Scrape the bowl and spoon often during mixing. Add the eggs and remaining milk, beating an additional 2 minutes. Pour the batter into two 8-inch well-greased and welwaxpaper-lined pans. Bake at 375º for 20-25 minutes.

This cake recipe was something Grandma used often. It dated back to the days when she was just starting out as a cook. She liked recipes that didn't use a lot of eggs because eggs were difficult to obtain during the time that the country was at War.
