6 cups chicken broth
2 cans coconut milk
2 tsp fresh grated ginger
2 garlic cloves crushed
1-2 tsp red curry paste (or more for more heat and flavour)
salt and pepper to taste
Bring to a boil.
Add Frozen or fresh fish (I often use Basa or Cod) or shrimp or sliced chicken.
Add 2 cups frozen or fresh broccoli
1 can drained mini corn cobs (optional)
*cilantro and limes

Heat till fish is cooked. Serve sprinkled with chopped cilantro and a squeeze of lime!
