Caribbean Banana Pudding Recipe

6 Large Egg Yolks
1 Cup Sugar
1/2 Cup All Purpose Flour
1/4 Tsp. Salt
3 Cups Half and Half
2 TBLS. Butter
1/4 Tsp. Coconut Extract
3 Tsp. Vanilla (divided)
3 Cups Heavy Cream
1/2 Cup Powdered Sugar
1 Box Vanilla Wafers
5-6 Bananas (I slice my bananas and pour a small can of pineapple juice over them, this seems to stop the browning of the banana)

Whisk egg yolks in a medium bowl until thick and lemon colored, 1 minute.

Stir together sugar, flour and salt in a heavy saucepan. Gradually whisk in the half and half. Whisking constantly, bring mixture just to a boil, cook over medium heat 8-10 minutes. Remove from heat.

Gradually whisk in a small amount of yolks, just a couple tablespoons at a time to temper the yolks, after all the yolks are incorporated cook 1 more minute.
Remove from heat and whisk in butter, coconut extract and 2 tsp. of the vanilla.
Transfer to a container and place plastic wrap down on top so as not to form a skin. Cool completely in fridge for at least 2 hours or overnight.

Beat Cream with remaining tsp. of vanilla, gradually add powdered sugar and beat until medium peaks form.

Arrange wafers in the bottom of a 9 x 9 dish, you could use a Trifle Bowl, top wafers with bananas you have removed from pineapple juice with a slotted spoon, top bananas with half the pudding and then top with half the whipped cream. Repeat once. I topped mine with a little toasted coconut, the crunch is nice and it has a little coconut extract in the pudding and gives a nice finished look.

This is such a great dessert and, I hate to say it but so much better than the store bought pudding and cool whip that most had when they were young.
Pudding is so easy to make and you can flavor it how you like.
Tom loves anything with bananas so he really likes this. (Actually Tom loves everything)
