8 eggs
1/2 cup half and half (I use a small (4oz) can of evaporated milk)
1 cup (4oz) shredded cheddar cheese
1 cup finely chopped ham (or any meat: bacon or sausage)
1/4 cup finely chopped green pepper or green chili
1/4 cup finely chopped onion optional

Directions:
Directions:
In a large bowl whisk the eggs and cream. Stir in the cheese, ham, green pepper and onion. (I do add some salt and pepper). Pour into a greased 8x8 cake pan.
Bake at 400º for 25 minutes or until golden brown (or bake at 350º for 40-45 minutes)
6 nice servings.

We have used green pepper or the green chilies; also we like to warm a little salsa and serve with this you could also use a dab of sour cream. Just a suggestion it is good just the way it is. I add vegetables sometimes and if you use asparagus it should be partially cooked first.
