4 medium zucchini
1/4 cup carrots, diced
1/4 cup green onions, chopped
2 tbsp. Italian dressing
1 (7oz.) can albacore or chunk light tuna
1/4 cup cooked rice
1/4 tsp. garlic powder
1/4 tsp. pepper
1/2 cup cheddar or mozzarella cheese, shredded

Directions:

Cut squash lengthwise into halves. Trim a very thin slice from bottom of each squash half so it will sit flat. Scoop out pulp from each half leaving 1/2 inch thick shells. Chop pulp, set aside.
Place squash shells in boiling water to cover for 5 minutes. Rinse in cold water. Drain shells well, upside down on paper towels. Set aside. Preheat oven to 375º F.
For filling, saute' carrot, onion and chopped squash pulp in Italian dressing for 3 minutes. Stir in tuna, rice and seasonings until well combined.
Mound filling mixture into shells.
Spray a shallow baking dish with non stick cooking spray. Place shells in dish; cover with foil. Bake for about 20 minutes. Uncover; top with cheese. Bake for 5 minutes more or until heated through.
Makes 4 servings.
