4 large russet potatoes
5 T butter, divided
1 onion, finely chopped
1/3 tsp salt
1/3 tsp pepper

1. Cut potatoes into 3/4-inch chunks/wedges.

2. Melt 4 T butter in a large skillet over medium heat.

3. Add potatoes. Cover and fry over medium heat for 8 minutes, stirring only occasionally.

4. Uncover; and add remaining butter, onions and seasonings. Cook for 8-10 minutes more or until potatoes are tender and light brown, turning only occasionally. Add more butter during cooking as needed.

TIP: Can par cook in microwave to cut down on cooking time. Place in vented bowl and cool for 3 minutes; stir and cook for 2 more minutes. Drain.
