Blueberry French Toast Casserole Recipe

12 slices day old white bread, crust removed
2 packages cream cheese
1 C blueberries
12 eggs
1/3 C maple syrup or honey

Sauce:
1 C sugar
2 TB cornstarch
1 C water
1 C blueberries
1 T butter or margarine

Directions:
Directions:
Cut bread into 1 in cubes. Place half in greased 13 x 9 pan.
Cut cream cheese into 1 in cubes and place over bread
Top with blueberries and remaining bread.
Beat eggs, add milk and syrup.
Pour over bread mixture. Chill 8 hours or overnight
Remove 30 minutes before baking
Cover and bake 350 for 30 minutes until golden brown and center is set.

In saucepan combine sugar, cornstarch, water. Bring to a boil over medium heat, boil 3 minutes stirring constantly. Stir in blueberries, reduce heat and simmer for 8 - 10 minutes. Stir in butter and serve over the toast...or can be served with purchased blueberry syrup.
