2 cups flour
2 cups sugar
2 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1-1/2 cups oil
4 eggs
3 cup carrots, grated
3/4 cup nuts

Frosting:
1 cup evaporated milk
1 cup sugar
3 egg yolks
1 tsp. vanilla
1 cup pecans, chopped

Directions:
Directions:
Cake: Makes 3 layers. Sift dry ingredients together and set aside. Mix oil, sugar, and eggs, beating after each. Add dry ingredients. Mix well. Add carrots and nuts. Bake 30 minutes at 325º.

Frosting: Mix together all ingredients except nuts. Cook over medium heat until thick. Add nuts. Beat and spread on layers.
