1tsp butter
1 C thinly sliced leeks
1 10 oz package of fresh spinach
1/2 C fat-free milk
2 T finely chopped fresh basil
1/2 tsp salt
1/4 tsp pepper
4 large eggs
4 large egg whites
2 cups cooked, peeled, red potatoes
Cooking spray
1 1/2 Tdry bread crumbs
1/2 C shredded provolone cheese

Directions:

Preheat oven to 350º
Melt butter in a sauce pan (Dutch oven) over medium heat add leek, sauté until tender. Add spinach and sauté until wilted well. Put mixture in a colander and press until barely moist.
Combine milk, basil, salt and pepper. Add eggs stir with whisk add leek mixture and potato. Pour into 10" round ceramic baking dish or a pie plate carted with cooking spray. Sprinkle with breadcrumbs and top with cheese.
Bake for 25 minutes or until center is set.
Preheat broiler. Broil Frittata for about 4 minutes or until golden brown. Cut into wedges
