1 can salmon or 1/2 pound fresh salmon can be used
4 tablespoons butter, divided
3/4 cup onion, diced
1/2 cup celery, diced
1/4 cup red bell pepper, diced
1/4 cup fresh parsley, chopped
1/2 teaspoon hot sauce
1-1/2 teaspoons Old Bay seasoning
1 cup crushed saltine crackers
2 eggs, slightly beaten
1/2 cup mayonnaise
2 teaspoons Dijon mustard
2 tablespoons extra virgin olive oil

Directions:
Directions:
Melt 2 tablespoons butter in skillet and cook onion, celery and red pepper until soft. Stir in parsley, hot sauce and Old Bay and cook a few minutes longer. Remove from heat and allow to cool. Mix the above mixture with salmon, 1/3 cracker crumbs, eggs, mayonnaise and Dijon. Form into patties and coat with the remainder of cracker crumbs. Heat remaining 2 tablespoons butter and oil and cook until brown.
