• 1 small clove garlic
• ¼ cup olive oil
• 1 tsp. lemon juice
• ½ cup parmesan cheese
• 1 coddled egg yolk
• ½ tsp. Dijon mustard
• ½ in. anchovy paste (from tube)

Coddle the egg by placing directly from refrigerator into boiling water for 5 minutes, then pour out hot water and cover in cold water. Once cool, cut off the top of the egg and scoop out just the yolk. Mince the garlic and add to the yolk along with lemon juice, mustard, anchovy paste, and season with black pepper. Whisk until blended and gently add olive oil creating an emulsion. Add cheese and toss with lettuce, enough to cover 2 heads of romaine lettuce.

Okay, I know, sort of raw egg yolk. Anchovy paste. Both of these sound gross, but TRUST ME this is the best Caesar dressing. After you make it once you'll never go back.
