Salad:
• 12 oz. box tricolor rotini
• 2 cups broccoli florets
• 3/4 cup cubed mozzarella (4 oz.)
• 3/4 cup diced red pepper
• 12 cherry tomatoes, halved
• 1/3 cup diced purple onion
• 3/4 cup sautéed sliced mushrooms
• 2 tbsp. minced green onion

Dressing:
• 1 tbsp. fresh parsley
• 1 tsp basil
• 1 tsp oregano
• 1 tsp pepper
• 1 tsp dry mustard
• 2 cloves minced garlic
• 1/3 cup wine vinegar
• 9-12 tbsp. olive oil

Directions:
Directions:
Combine pasta and all salad ingredients in a large bowl. Note: When adding mozzarella cheese, if ingredients are still hot, cheese will melt. Meanwhile, mix vinegar and all ingredients from the dressing list together in a jar and shake vigorously. Pour over pasta salad and toss to coat well. Let stand at room temperature for at least 1 hour to allow flavors to blend. Cover and refrigerate an additional hour. Enjoy!
