• 1 medium yellow onion
• 1 large carrot
• 2 stalks celery
• 1 lb. ground beef (80/20)
• 2 cups dry red wine
• 28 oz. can San Marzano tomatoes
• Ό cup olive oil

Directions:
Directions:

Place a large pot over medium heat. Finely dice yellow onion, carrot, and celery into very small pieces. Get them as fine as possible as these should “melt” into the finished product. Add olive oil to pot along with onion, carrot, and celery. Mix until onions are becoming translucent, about 5 minutes, then add ground beef. Break up the ground beef with a wooden spoon so that it forms small chunks rather than completely separating it. Cook until beef has begun to brown, then add wine and stir.

As the wine cooks down, place the entire contents of the can of tomatoes in a blender and purιe until smooth. When wine has reduced and the solid ingredients are visible, add the pureed tomatoes. Lower the flame until the sauce comes to a light simmer and cook for 1 hour. Season with salt and pepper and serve over pasta with plenty of parmesan cheese. Enjoy!

The best way to serve this is with 1 lb. of al dente linguine cooked for the last couple minutes right in the pot of sauce. This is my most requested recipe and actually came about by accident when a friend gave me the wrong ingredients for her sauce. Bon Appetite!
