1 Pillsbury Golden Butter Cake Mix (prepared according to instructions on box)

SPICE LAYER
1 tsp. ground cinnamon
1/2 tsp.ground cloves
1 tsp. ground allspice
1/2 cup chopped nuts

FILLING AND TOPPING
2 cups sugar
2 tbsp. cornstarch
1 cup boiling water
1 20oz can crushed pineapple (drained)
1 cup coconut juice
Zest and juice of two lemons
1/2 cup maraschino cherries

Preheat oven to 350º .

Grease and flour three 9-inch cake pans. Divide batter into thirds. Pour 1/3 of batter into two prepared pans . For the remaining pan, add the spice layer ingredients. Pour into the remaining prepared pan.

Bake all layers 25-30 minutes. Cool layers in pans for 10 minutes then invert onto a wire rack to cool completely.

For filling and topping:
Stir sugar and cornstarch in a medium saucepan. Add water, pineapple, coconut, lemon juice and zest. Cook over medium heat until thick enough to spread on cake layers.

Remove from heat and stir in cherries.. Allow to slightly cool.

To assemble cake...Stack one plain layer on cake plate, top with a thin layer of filling; add spice layer and more filling. Top with remaining layer. Spread remaining filling over the top and sides of cake.
