Ingredients: -1 lb chicken tenders, cut lengthwise into thin strips (I used 14 oz chicken breast) -1/8 tsp salt -1 tbsp olive oil -1 small red onion, thinly sliced -1 cup cucumber -1 pint grape tomatoes (I used 1/2 red and 1/2 yellow cherry tomatoes) -2 tsp dried oregano -2 cups hot cooked whole wheat farfalle (bow ties) *I didn't use* -1 tsp grated lemon zest -1 tbsp lemon juice -3 oz reduced-fat feta cheese, crumbled
I added: -1/2 of a yellow, red, and orange pepper, chopped -1/2 a jar of roasted red peppers, sliced thin -a few handfuls of spinach

Directions:-Sprinkle chicken with salt. Heat wok or large deep nonstick skillet over medium heat. Add oil and swirl to coat wok. Add chicken and stir-fry until browned and cooked through, about 4 minutes, transfer to plate.
-Add onion and peppers to wok and stir-fry for about 5 minutes. Add tomatoes and oregano, stir-fry about 3 minutes. Add roasted red pepper and cucumber, stir-fry 2 minutes. Add spinach and allow it to wilt. Return chicken to wok and stir-fry until heated through, about 1 minute longer. Add lemon zest and lemon juice, stir. Add feta, stir and serve. *Make sure to season veges with salt as it cooks* |
