-1 small red onion, thinly sliced (about 1 cup)
-4 cups lightly packed thinly sliced Napa or Savoy cabbage
-2 tbsp unseasoned rice vinegar
-2 tbsp lime juice
-1 tsp sugar (I used about 1 tbsp honey)
-1/2 tsp salt
-1/8 tsp coarsely ground pepper
-2 tbsp hoisin sauce
-6 drops hot pepper sauce or sambal oelek (I used Sriracha)
-8 (1/4 lb) chicken drumsticks, skinned (I used 1 lb chicken breast)

-Spray grill rack with nonstick spray. Preheat grill to medium or prepare medium fire.

-To make salad, combine onion with enough water to cover in a large bowl. Let stand for 10 minutes; drain. (I didn't do). Add cabbage, vinegar, 1 tbsp of lime juice, the sugar (or honey), salt, and pepper to onion; toss until coated well. *For the salt, I started with 1/4 tsp then added salt to taste* Don't put the dressing on until almost ready to serve because the Napa cabbage will wilt.

-To make glaze, stir together hoisin sauce, remaining tbsp lime juice, and the pepper sauce. Add drumsticks or breasts, turning until coated well. *I marinated this overnight but you don't have to*. Place chicken on grill rack and grill, turning, until instant-read thermometer inserted in the drumstick registers 165 degrees, about 20 minutes. Serve with salad.

Per serving (2 drumsticks and 1 1/4 cups salad): 206 Cal, 5 g Total Fat, 1 g Saturated Fat, 0 g Trans Fat, 98 mg Chol, 599 mg Sod, 12 g Carb, 6 g Sugar, 3 g Fiber, 28 g Protein, 47 mg Calc.

I used my grill pan since it was raining. I started it on the stove and finished it in the oven.

FYI: Sambal oelek is a blend of chiles, brown sugar, and salt. Other variations of sambal include kaffir lime, galangal, tamarind, and coconut.
