1 lb. pinto beans (3 cups)
3 lb. pork roast
7 cups water
1 tbsp. salt
1 tbsp. cumin
4 oz. can green chilies
2 oz. jar diced pimento
1/2 cup onion, chopped
2 gloves garlic, minced
2 tbsp. chili powder
1 tsp. oregano

Serve with:
corn chips
diced avocado
tomatoes, diced
cheddar cheese, shredded
green onion, sliced
hot sauce

Directions:
Directions:
Place beans, lean roast, water, onion, garlic, and remaining ingredients in a heavy skillet or dutch oven. Cover and simmer on top of range for about 5 hours or until roast is fork tender. Remove roast and break up with fork. Return meat to pot and cook Chalupa uncovered until thick, about 1-1/2 hours. Serve over corn chips and pass condiments for toppings.
