¾ cup flour
¼ cup cornmeal
1 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking ground cinnamon
¼ tsp. ground cloves
½ tsp. salt
1 egg
1 Tbsp. butter (melted)
1 cup 2% reduced fat milk
¾ cup grated zucchini (excess liquid squeezed out)
Cooking spray

Directions:

Combine flour and next 6 ingredients (cornmeal through salt)

In a separate bowl, whisk together egg, melted butter and milk. Add to flour mixture and whisk to combine. Stir in zucchini.

Spray griddle with cooking spray and heat over medium heat. Spoon batter over grill (1/4 cup amts.) and cook until golden brown on both sides.
